Pierre Marcolini, pioneer of Bean-to-Bar, has selected 5 cocoa grands crus from Peru, Cuba, Sao Tomé, Madagascar and India, roasted directly in the atelier to reveal their unique flavours.
With citrus, floral, smoky or even nutmeg notes, to give a subtle lift to these spectacular ganaches.
